Import an image.
This is the Live Trace button that leads to a variety of options.
Press the Live Trace button.
Undo the last step and open more options.
Select Colour 6.
You will get a surprising result.
Undo that last step and open Tracing Options. For Mode choose Colour. Open the kids stuff Swatches to choose it. Hit OK.
Here is the result.
Open the Foliage swatches and repeat that last step by first undoing what we did. Reapply through Tracing Options.
I'm impressed.

Change areas of any image after conversion, choose the Expand and then use the Direct Selection Tool to make changes.
